Project Title Effect of changing side-chains of fisetin on its antibacterial and antioxidant properties
Synopsis Fisetin (3,3',4',7-tetrahydroxyflavone), is one of the common flavonoids in fruits and vegetables such as strawberry, apple, persimmon, grape, onion and cucumber. Fisetin is known to have antioxidant properties and is reported to have implication in the development of many diseases, including ageing, carcinogenesis, mutagenesis, and retinal degeneration. Thus, fisetin is becoming more widely researched. Recent studies on the synthesis of 1-alkyl- 4pyridinium bromides from 1,40 –diazaflavone have proven that modification of side-chains of flavonoids affects their antibacterial and antioxidant acitivities. In this study, the side chains of fisetin (OH bonds) can be modified and replaced with carbon chains through mainly alkylation. Fisetin alkylated with dimethyl carbonate and acetic anhydride resulted in new products of fisetin with hydroxyl groups replaced with carbon chains. The alkylated fisetin still exhibits generally weaker antioxidant activity and antibacterial properties against E. coli and B. cereus.
